🥣 The Recipe

Veggie-Loaded Aubergines

Ingredients:

  • 1 large aubergine

  • 1 onion, diced

  • 1 clove garlic, crushed

  • 2 medium tomatoes or ½ tin chopped tomatoes

  • 1 tbsp tomato purée

  • 1 tsp dried herbs

  • 1 scoop Herbalife Personalised Protein Powder (Formula 3)

  • 1 scoop Herbalife Beta Heart®

  • Fresh basil to garnish


Directions:

  1. Halve your aubergine and roast in the oven for 20 minutes until soft.

  2. Sauté onion and garlic in a pan, then add the chopped aubergine flesh.

  3. Stir in tomatoes, tomato purée, and herbs. Simmer for 15–20 minutes until rich and thick.

  4. Remove from the heat and stir in PPP and Beta Heart® until smooth and creamy.

  5. Spoon the mixture back into the aubergine halves and bake for a further 10 minutes.

  6. Garnish with basil and serve with a green salad or quinoa for a balanced meal.
